Papa’s Story

Papa’s Best Batch smokehouse and sammich shop serves lunch and early dinner from an iconic 1972 Airstream trailer at The Greig Farm (243 Pitcher Lane, RH, 12571).

Papa is Jody Apap, long-time Red Hook resident and self-taught smoker and cook.

Jody started smoking pistachios and almonds in his back yard for commercial distribution 9 years ago and developed today’s menu by building and  refining the notion of “smoking small.” He developed a few key flavor profiles and his smoking process using applewood and charcoal on The Greig Farm.

He spent months searching for an Airstream to transform into his vision of a BBQ joint. In July 2014, Jody and his Papa towed this Airstream back from Burlington VT.

Jody singlehandedly gutted the airstream to its outer shell and built the complete commercial kitchen required to open and serve his brand of “Better than BBQ” BBQ.
2022 will be Jody’s 8th year serving Papa’s Best Batch out of this beautiful old Airstream.

Today Papa’s Best gourmet smoked pistachios, almonds, and beef jerky are available in more than 300 stores throughout the Hudson Valley and beyond (local and gourmet markets in more than 35 states carry our products!). 

Papa’s Best Batch is part of The Shops at Greig Farm, consisting of a craft market, farmer’s market, seasonal pick your own fruit fields as well as goat pen, hiking paths, and a jeweler’s workshop.

In addition to our Airstream trailer we operate a food truck for public and private events.
